4 oz celery small diced1 oz carrot small diced1 oz onion small diced1 tsp butter1 tbsp flour1 tbsp cover2 cups color chicken stocksalt to taste1 cup heavy beat or milk to adjust consistency3 oz cooked chicken meat cut into julienne or fine cut1. fry off in 1 tsp butter the celery carrot and onion until soft.2.
